Why no unit conversion? This scales quantities in whatever unit you enter (cups stay cups, grams stay grams) rather than converting between volume and weight, since that conversion depends on each ingredient's density and would require guessing. This tool scales every ingredient by the same ratio (target servings divided by original servings), which works well for most recipes. A few exceptions are worth knowing: leavening agents like baking soda and baking powder don’t always scale linearly at large multiples, and cooking times generally don’t scale at all (a casserole for 16 doesn’t bake in the same time as one for 4, though it may need a larger pan and slightly longer bake).
Spices and seasonings are also often better scaled conservatively, adding a bit less than the exact ratio suggests and adjusting to taste, since perceived spice intensity doesn’t always increase linearly with quantity.
